👩🏻🍳 BEFORE YOU GET STARTED
If you’re new to cooking with cannabis, you’ll want to learn more about getting started. It’s not hard to cook with cannabis, but there are a few things you’ll need to understand first. For this recipe, you may need to know:
📋INGREDIENTS
- Peanut butter and/or Cannabis Infused Peanut Butter
- Sweetened condensed milk and/or Sweetened Condensed Milk
- Vanilla extract
- Original Bisquick mix
- OPTIONAL: THC Powder
See recipe card for exact quantities.
🔪 INSTRUCTIONS
First, you'll need to determine how you want to incorporate your cannabis. One of the great parts of this recipe is the multitude of options you have in adding your infusions.
You can replace some or all of the peanut butter with Cannabis Infused Peanut Butter.
You can replace some or all of the Sweetened Condensed Milk with a cannabis-infused version. This would simply require you to follow this recipe to make an infused condensed milk.
You could also opt to simply add in some THC powder.
- Heat oven to 350 degrees F.
- Place peanut butter, sweetened condensed milk, and vanilla in a large mixing bowl and beat with an electric mixer on low speed.
- Add in the Bisquick to the mixture and stir until fully incorporated. (You will also add the THC powder at this time, if using.)
- With a large cookie scoop, shape dough into 1-inch balls and place on an ungreased cookie sheet. Flatten the cookies halfway with the back of a fork, making a criss-cross pattern in the top of each cookie.
- Cover the tray with plastic wrap and refrigerate for at least 1 hour. Chilling the dough is essential to ensure the cookies hold their shape while baking.
- Place each mound of dough on the baking sheet at least 2 inches apart. Bake for 13-14 minutes, or until the tops are lightly brown. If you want super soft cookies, bake for a maximum of 14 minutes. If you want well done, slightly crunchy cookies, add a few more minutes.
- Cookies should be a little soft after baking. Allow them to cool and solidify on the baking sheet for 10 minutes. They will firm up as they cool.
🧾 SUBSTITUTIONS
Make it Gluten Free
Easy Peasy - simply use Gluten Free Bisquick.
Make it Dairy Free
Unfortunately, there's not a great dairy-free option for Sweetened, Condensed Milk. If you need a dairy free peanut butter cookie, we suggest you use this recipe.
📖 VARIATIONS
There are a couple variations for this recipe:
- Add Sugar! Prior to making a criss-cross pattern in the peanut butter cookie dough, roll each ball in granulated sugar (white sugar). Then you can continue with all other recipe instructions. This will add a little extra sweetness to your cookie.
- Make Peanut Butter Blossoms (Bisquick Peanut Butter Blossom Cookies)! Immediately after removing the cookies from the oven, press a milk chocolate candy into the top of each cookie. This can be hershey's kisses, or even dark chocolate. Easy peasy!
- Add Chocolate Chips or Peanuts: Want some crunch with your cookie? Add ½ cup of peanuts or chocolate chips prior to baking. Yum!
