Ingredients
CannaButter Version
- 2 1/2 cups old fashioned rolled oats (use gluten free if needed)
- 1/2 cup nuts roughly chopped (if omitting nuts, increase oatmeal by 1/2 cup)
- 1/4 cup honey
- 2 tablespoons CannaButter (use dairy-free CannaButter recipe if needed)
- 2 tablespoons unsalted butter (use dairy-free butter if needed)
- 1/3 cup brown sugar
- 1 teaspoon vanilla extract
- OPTIONAL: 1/4 cup peanut butter
- 3/4 cups total extra mix ins
CannaHoney Version
- 2 1/2 cups old fashioned rolled oats (use gluten free if needed)
- 1/2 cup nuts roughly chopped (if omitting nuts, increase oatmeal by 1/2 cup)
- 1/4 cup CannaHoney
- 1/4 cup unsalted butter (use dairy-free butter if needed)
- 1/3 cup brown sugar
- 1 teaspoon vanilla extract
- OPTIONAL: 1/4 cup peanut butter
- 3/4 cups total extra mix ins
Instructions
- OPTIONAL: Place the oats and nuts on a rimmed baking sheet and bake for 8-10 minutes in a 350 degree oven (until lightly toasted). This will give your granola bars more of a cookie taste, but it is optional.
- Spray a 9-inch square baking dish with cooking spray or line with parchment paper.
- Place nuts and oats in a large bowl.
- In a small saucepan, combine honey (or CannaHoney), butter (and/or CannaButter) and brown sugar. Cook over medium heat until the butter is melted, and the sugar is fully dissolved. Stir occasionally.
- When butter mixture is finished, remove from heat and stir in the vanilla and salt. **If adding peanut butter, add 1/4 cup peanut butter to this mixture.
- Pour mixture over the oats and nuts and stir to combine.
- Add mix-in ingredients (except for chocolate) and stir until all oats are covered.
- If adding chocolate, wait 10 minutes for mixture to cool down before adding.
- Place mixture in the prepared pan. Use the bottom of a greased measuring cup or spoon to press the mixture into the pan.
- Place the granola bars in the fridge for at least 2 hours. (Overnight is even better!)
- Lift the bars from the pan and place them on a cutting board. Cut into 16 equal pieces.

These granola bars also taste amazing as granola. Divide into 16 equal portions and sprinkle on yogurt or eat with milk.
